Recipe: No-Bake Chocolate Peanut Butter Cookies

Do you have a cookie burning problem? Me too. It seems that whenever I bake, I either get soft, yogurt-y cookie puddles, or the hardest cookie bricks imaginable. Lucky for me, there is an alternative: no-bake cookies!

I'm hardly the first person to ever make them, but there's something satisfying about making cookies without so much as touching an oven. Now, without further ado, the recipe:

1/2 cup softened butter

1/3 cup cocoa powder

1/2 cup whole milk

2 cups sugar

/4 teaspoon salt 1 1/2 teaspoon vanilla extract 1/2 cup smooth peanut butter 3 cups quick oats 1. In a pot, combine the butter, cocoa powder, milk, salt and sugar. Bring to a robust boil, stirring constantly. Continue to boil for 1 minute. 2. Remove from the heat and mix in vanilla and peanut butter, stirring until completely smooth. Mix in oatmeal to hold it together. 3. Drop rounded tablespoons onto a lined sheet pan. Let harden for about an hour, preferably in a cold place. High humidity may affect the texture, so it's better to let them harden in the fridge on such a day.
