Recipe: Poor Man's Tacos

Happy Cinco de Mayo! By pure coincidence, it's also Taco Tuesday! I don't exactly have a traditional recipe for tacos, passed down through generations, but I do remember learning about what my family called 'poor man's tacos.' The original recipe called for little more than a shell or tortilla, cheese, and ground beef with a little chili powder, salt, and pepper, but I've dressed it up just a little. Don't worry: the recipe is still extremely easy, and very affordable! If you're feeling fancy, you can even try out my homemade taco seasoning recipe here!

1 lb ground beef
Corn or flour tortillas or shells
1/2 yellow onion, chopped
1/2 bell pepper, chopped
1 tbsp garlic, minced
2 tbsp picante sauce
2 tbsp seasoning (or 1 packet of commercial seasoning)
1 tsp salt
1 tsp black pepper

1. Brown ground beef halfway in a skillet over medium heat, stirring occasionally. Season with salt and pepper.

2. Add onion, bell pepper, and garlic. Cook until beef is completely browned, the bell peppers are slightly soft, and onions are slightly translucent.

3. Add chosen seasoning and picante sauce. Mix completely.

4. Construct taco as desired in tortilla or shell, adding tomato, sour cream, cheese, lettuce, or any topping you like.
